You will need:
- 3-4 Pieces of chicken joints.
- Roughly 100ml of lemon juice.
- 2 beef stock cubes.
- 5 table spoons of heated (hot) honey.
- Garlic powder (as much as you like).
- Smoked Paprika. (as much as you like).
- Teaspoon of pepper.
- Tikka masala powder.
- Dried Thyme.
- Teaspoon of salt.
- 1 cup of oil.
- Aromat (as much as you like).
Method:
Starting off with the hot honey and two stock cubes in a bowl, mix them together until the stock cubes completely dissolve in the honey. You can then start to add the garlic powder, smoked paprika, tikka masala powder, aromat, pepper, dried thyme and salt to the honey and stock cube mix.
Pour in the cup of oil and start to mix all of the ingredients together. It will seem like it is clumping up, but don’t worry, that is just the honey getting stiff. Finally add the lemon juice to the mix and mix it all together until the lemon breaks up the honey and there is to more clumping.
Pour the marinade over the chicken and leave it to soak for a few hours. ( I left it to soak for 4 hours, moving the chicken pieces ever now and then to ensure full coverage) Once you are ready to cook the chicken, place the joints in a deep oven dish, Then pour the marinade all over the chicken. Place the chicken in the oven on 180 degrees Celsius for 45 minutes, basting the chicken with the marinade every 15 minutes. Once the 45 minutes are up, drain out the marinade ( you might want to save it, or just throw it away), turn the oven up to 200 degrees. place the chicken back in for 10 minutes, this will make the skin a little crispy and yummy and sticky, but in a good way. Then dish up and enjoy the yummy goodness!!!
I had mine with a Mediterranean roast veg cous cous.
